IRIO, MINCED BEEF STEW AND KACHUMBARI RECIPE-By Cera

INGREDIENTS

IRIO

  1. 1 cups of maize off the cob
  2. 1 cups of green peas
  3. 5 big potatoes
  4. A bunch of pumpkin leaves (kahurura).
  5. Pinch of salt to taste.
  6. 1 large onion
  7. Cooking oil.

 

MINCED BEEF STEW.

  1. Half a kilo of minced beef.
  2. 2 tomatoes.
  3. 4 cloves of garlic
  4. 1 medium sized onion
  5. Cooking oil
  6. A bunch of dhania

 

KACHUMBARI.

  1. 3 tomatoes.
  2. 1 small onion
  3. A bunch of dhania
  4. Green pepper (optional)
  5. Avocado.

DIRECTIONS.

IRIO

  1. Prepare peas, maize, potatoes, pumpkin leaves and wash.
  2. In a big cooking pot boil the maize and peas until cooked.
  3. Add potatoes and pumpkin leaves and let the potatoes to cook with medium heat.
  4. In a pan, cook onions and oil until the turn brown.
  5. Drain excess water and mash potatoes, pumpkin leaves, and peas. Leave until they are well mixed and soft.
  6. Add the brown onions and oil to the mukimo/ irio and mix evenly.
  7. Put aside to cool.

MINCED BEEF STEW.

  1. Prepare and wash onions, garlic, tomatoes and dhania.
  2. Add onions, garlic and oil to a pan and stir until they turn brown.
  3. Add the minced meat and leave for 20 minutes to cook. Add half a cup of water.image
  4. Add tomatoes.
  5. Add dhania and stir.
  6. Put aside.

KACHUMBARI.

  1. Wash and prepare and ingredients.
  2. Chop them into small pieces.
  3. Wash the sliced onion with salty water to remove the bitter taste.
  4. Mix them in a bowl.                                                                                            image
